Saimin Flat Noodles
Saimin Flat Noodles (Northshore-style), are not typical as most saimin noodles are medium sized, however there are actually two regional flat noodles on Oahu. Haleiwa Flat Saimin Noodles and Wahiawa Saimin Noodles. As many saimin noodles the flat saimin noodles are descendant of Hawaii residents of that time era. Many recipes that use saimin noodles of the northshore use flat noodles. Follow the use of: eggs, water, all-purpose flour, and salt. Both types of saimin flat noodles have left their tradition in the northern regions of the island of Oahu and there are recipes from households that used these noodles. Flat Noodle Fried Saimin, Flat Noodle Beef Saimin, and Flat Noodle Stewed Saimin. Northshore, plays host to many of Hawaiis guests for its famed sunsets and wonderful beaches. It is also known for a unique sort of saimin that has a bit more soup on it than most, sorta like a beach boy coming out from the water, except its a noodle coming out from some saimin broth. These would be the unique noodles from Oahu's North area the Flat Saimin noodle. Origins of Saimin Flat Noodles Preservation of the style of Saimin flat noodles was done for generations from the Shigeoka Ohana of Shige's Saimin that is famed for their importance of food history. They have a legacy as a family and holders of the flat saimin noodle that is a texture of noodle that comes from that particular region. People come from all over the island to taste not only for the unique regional broth, but also these Saimin Flat Noodles. After some nice sets of waves and the easy going attitudes there would be an antidote to that would help them complete their day, Saimin! In the North Shore area there was a noodle that gripped residents with its thunderous savoriness in its dashi that tasted of beef. There was a particular duo that would change the saimin landscape with their noodles and broth. This was due to Fujimatsu Shigeoka and Yoshie Nakai in the 1930s were seen as the Fujin and Raijin of Saimen (aka. The Saimin Duo). Those who drove far distances to the beaches from other parts of the island would begin calling it the original Haleiwa-style Saimin. They would later have their recipe tucked away for family to find later as it would rise up again from beneath the waves figuratively speaking as Shige's Saimin Stand. Wahiawa Flat Saimin (Alaea Abalone) Wahiawa followed a strict broth that is as traditional as it can be using the old style abalone broth that was common in the olden days of the plantation. There were many restaurants that would have variations of this and a notable saimin stand was "Wahiawa Saimin Stand" on Kilani Ave near the Old Victory Theater, Shan's bakery, and Nakatani store. Yoshida Ohana. It would be the broth to compete with as it was of the older variety that was well known on the streets as the classic flavors. What was old was kept old in the ways of making Saimin broth with more expensive ingredients such as abalone that really stood out. There was a real battle between Haleiwa and Wahiawa saimin in the same town of Wahiawa. Haleiwa Flat Saimin (Alaea Beef) Haleiwa is where crabbing off the bridges brought a flavor of saimin from beef. The style would include a style of soup that would optionally be accompanied by shrimp and/or crab dashi base. The recipe of beef broth would become popular all around the northshore area to have its recipe found in many areas. Haleiwa-style Saimin would be apart of the Shigeoka legacy, however as Ross Shigeoka opened Shige's Saimin stand in the 1990s in Wahiawa. It is there the family would carve out the legacy for the next generation bringing flat noodles to the people of Wahiawa and popularizing the seasoning techniques brought from the North Shore Haleiwa. Flavors were added of miso saimin and curry saimin. By keeping the old plantation machine in the back for people to watch the noodles being made allowed for people to begin identifying the unique taste of Wahiawa-Style Flat Saimin Noodles.
