Hawaii Barbecue (regional food) the 50th states Barbecue.
Barbecue came to Hawaii in the form of thick sauces, large meats with bones, corn on the cob, coleslaw, baked beans, and bread rolls. Inspired from mainland Barbecue ideals of what is Barbecue, the basis of Barbecue was set in slow indirect heat, flavored by smoking, while grilling, is the definition of the word. Techniques were brought from multiple groups during the plantations and from the ancient Hawaiian imus for slow cooking far before mainland Barbecue started carving its own path as its own genre. The way Barbecue is in Hawaii varies with many meats, grill marinades, oils, fats, sauces, and dry rubs. Their are old establishments dedicated to Barbecue Plate Lunch joints that had taken marinating as the main flavor aspect and began concentrating on Hibachi Grilling and Huli Rotisseries.
