Ice Cream in Hawaii, the tropical paradise in that had some great dairy production with competing local businesses having their own characteristics, varieties, and approaches in the market. The air is clear and the land is rich that gives a nice element to the crops grown there and the animals that grazer the fields and lastly help us get to the skim milk and cream. This sort of environment would create some great flavors that could be made in Hawaii and were tasting its best when everything was locally sourced with a taste not comparable by the imported varieties of the mainland. With the temperatures of the day getting hotter as it gets closer to summer there is no treat better than something cold like ice cream or shave ice or both! There are many who have grown up with ice cream shops in the Aloha state that makes for an oddly satisfying experience of eating something cold on a really hot and muggy day. Just imagine a nice scoop of real Hawaii ice cream that a combination of something freezing, stirred, and melts on contact of the tongue with a creamy after taste. Yup! that would be ice cream! Kama'aina residents would work on the fields and have knowledge and access to many sorts of sugars and many sorts of fruits with wonderful combinations in flavor profiles. Many would take it for granted as common sense of dessert flavors or baked goods, but little did they know that those would be used years later for some delicious creamy ice cream. Many of these recipes would make their ways to soda fountains, home recipe cards, and ice cream factories. Ice Cream of the Hawaiian Islands Each island did things a little different and there are companies that reflect some of these unique flavors, such as: Lappert's Kauai Ice Cream (Lapperts Hawaii), Dave's Oahu Ice Cream (Dave's Ice Cream), Roselani's Maui Ice Cream (Roselani Ice Cream). There are many more companies that are in the ice cream business and have their own sub-regional styles. Other notable businesses were: Bubblies Ice Cream, and Foremost Ice Cream Factory, Meadow Gold Ice Cream Factory. Dessert was a crazy competition for those in the business and with so many regional pickings it was great if you had a sweet tooth. Things like Guri Guri Ice Cream, Soft Serve Ice Cream, Ice Cakes, Shave Ice with Ice Cream, and Ice Cream Pie would be all over the place. Stores had to pick wisely on which types of desserts they would speciallize and make sure they had competitive flavors that could out do their competitors. The traditional Ice Cream shop is still evolving with the ever changing flavors and that leaves plenty of room for creativity. Dave's Ice Cream would be known as one of the innovators of Hawaii ice cream with its large range of flavors that catered to local tastes. While it maybe most known next to Lapperts the history of Ice cream in Hawaii goes way back to Meadow Gold Ice Cream factory. Going back even further it was made in wooden barrels from some of the freshest ingredients coming straight from dairy farms and It was hard work to make. Homemade Ice Cream from the Barrel Wooden Ice Cream Makers, were slowly churned to make ice cream taste really good and was completely from scratch. The home made taste would be made by hand by cranking it and adding ice and it was a tough process with extra creamy and buttery tastes and a soft texture. People could just add their favorite flavors to the mix and make their own ice cream. Today, many can plug in a ice cream maker into a power source and make some home made ice cream. In the 1950s, many would opt to make their own ice cream because it was seen as great fun with a delicious ending. Sometimes family members would take turns cranking the old school wooden ice cream makers while another would throw in other flavors and ingredients into the mix. When it was finally time for sample (taste test) the mixer would stick their finger in the ice cream and see if it was just right. Fountains would make their own home made ice cream that was made in Hawaii of course. This would bring many flavors that were literally made in peoples homes over as special flavors to be featured on the menu when a particular season hit there would be different variations. If they weren't found at the fountain it would be common to see it served up at home from the ice box. Many of these would depend on what they had growing in their neighborhood or even their own yard as many of the mixes were based on fruity flavors from what was available. The person making ice cream may have some hanging Lilikoi so they might be making some: Lilikoi Ice Cream, during Mango season there might be some Mango Ice Cream with mango chunks, and a few workers who were picking pineapple may be making their own Pineapple Ice Cream with small pine apple bits. A few remember their own delicious ice creams they would make and put it in a milk glass and swirl up the mixture. These ice creams were: Pineapple Coconut Milk Ice Cream (Coconut Pineapple Ice Cream), Strawberry Coconut Pineapple Ice Cream (Strawberry Pineapple Ice Cream), Orange Pineapple Ice Cream with lemon (Orange Pineapple Ice Cream), Mint Coconut Ice Cream (Mint Coconut Chip). Flavors of the Hawaii Drive Inns The old fashioned home recipes are countless as they really give you the feeling of the flavors of the time period. In the 1950s, there were creative flavors like: Peanut Butter Ice Cream, Peanut Butter Cookies & Cream, Chocolate Cookie Ice Cream with crushed oreos, Vanilla Bean Ice cream with vanilla specs. Just about anything people could find they would throw in with their ice cream maker to see if it would taste good or not. Ice Cream Parlor Varieties As Ice Cream became more popular there was a variety of ways that Ice Cream Parlors in Hawaii would make creations of creamy dessert art. There was always a variety of toppings and many of those toppings would be used to mix into the ice cream itself or placed on top as a sort of sprinkle. It was common for fresh fruits to be served with ice cream, but more common than not it would be a banana or freshly cut pineapple cubes. Nuts were popular in Ice Cream due to the delicious choice Macadamia nuts that are available. Lapperts would set the standard with: Vanilla Macadamia Nut, Chocolate Macadamia Nut, and Caramel Coconut Macadamia Nut. These would later inspire other flavors like: Strawberry Macadamia Nut, Coffee Macadamia Nut, and Macadamia Nut Cookie Ice Cream.
