Aichi Mazesoba
Aichi Mazesoba まぜそば, gets its name from the prefecture of Aichi. Maze Soba is also known as Taiwan mixed noodles in Japan and was said to originate in 2008 at a shop called "Menya Hanabi" Fireworks Noodle Shop. The story goes that the shop owner was trying to make Taiwan Ramen and had already made the meat for it. But it didn't go with the soup. When they were going to throw the meat away, one of the part time workers said, "What if you just put it on top of noodles?" From that start, it was perfected over time into the dish we know today. Mazeru means to stir soba is noodles, so together it means to stir the noodles. The dish is unique as it is a different sort of thicker noodles, but not always as there are multiple variations based on what areas it is made and home recipes that have their own variations as well. The words together means to mix up and the noodles and mixture items as well as the sauce are in a bowl and the eater goes on to mix it all together. As it comes with a thick sauce there is more than enough that is at the bottom to fully coat all of the noodles. It may not seem like it from its nice appearance, but if you search inside the noodles the sauce is underneath it all. Presentation has always been apart of making good dishes in Japan and with Maze Soba it is no different as it makes it considerate of the experience in that sense. Fans of the show Rurouni Kenshin would be interested in making their own variations of this Aichi Regional Cuisine of Nagoya Cuisine by looking into restaurants in different areas of the prefecture. This would start a project called the "Aichi Mazesoba" recipe road, which would be a stay at home project to make all the Mazesoba of Aichi.
