Karaage Chicken, the word "Kara" means "Tang" sort of like a referance to the Tang Dynasty and "age" means fried. Oita Karaage Chicken is prepared with sesame seed oil, shoyu, sake, ginger, black pepper, ichimi, Oita karaage marinade (grated garlic, grated apple, sake, pineapple juice, sugar), and coat in potato starch to fry. Hyogo Karaage Chicken originally started from the food sellers that sold Karaage Chicken on Nankin-machi street. It tasted not too different in its flavor from many other Karaage Chicken, so it was hard to distinguish the flavor. It had in it the taste of Potato Starch, Shaoxing Wine, Shoyu, Sugar, Mirin, Garlic, Ginger, and Salt. However, Kobe had began getting an identity for Mayonnaise-marinade from the award winning establishment "Karaage Shigemori" which had its secret sauce that has won the Karaage Grand Prix run by the Japan Karaage Association. Not only was it a Karaage with mayonnaise it used yuzu kosho which is what Oita Prefecture is known for producing Yuzu. So in a round about way it was like insulting Oita with a better prefectural Karaage in the Grand Prix with their own ingredients. Mayonnaise-marinade for Karaage Chicken works because it is a mixture of oil fat and egg yolk that sticks to the food and both ingredients are what work well with chicken. When looking at the packaging of the prepacked Karaage mix it shows a group of ingredients. This list includes citron pepper powder and fermented seasoning powder which can be for the yuzu kosho in powder form. There is Kombu extract powder as well as some milk ingredients and eggs which could be a mixture to replicate mayonnaise and kombu dashi. It is theorized on the process that the establishment uses, so people in the area experimented in their homes to replicate the flavor. The ingredient list home cooks have come up with has been: sesame seed oil, kombu dashi, grated garlic, grated ginger, sugar, and then adding the mayonnaise.
