Taking a Look at Hawaii's Shrimp
The long Koolau mountains that spread across the landscape on the windward side seems empty for food inspiration, but if you drive all the way our to Kaneohe and Kailua you will be pleasantly surprised from the history of the Andy's Empire that begins the journey of our commitment to historical inspired sandwiches. Drive a little more passed that to the Shrimp Farms on the North side...and youll be entering the world of the Shrimp. When on the North Shore which is far no matter how you get there. Will have a variety of trucks on the side. The most popular side food is Shrimp. Picking up some inspiration from the shrimp trucks sauce and combine that with a Maryland missionary Crab cake and you got the makings of a great concoction. But one more part of the equation includes the historic Andy's empire classic Shrimp Burger. This weekend there is a private party of friends from TRIO windward who are going to biting in some great Shrimp Burgers. The sauces are simmered with the garlic to get all the flavors out. The white wine is added with some sugar and shoyu... and then the concept of more butter more betta! The sauce is done~ let it cool down, caramalize sweet maui onions, lemons, and garlic powder, and let them soak in the garlic butter sauce we just finished. We then head for the batter that puts everything together with mayonnaise for creaminess, bread crumbs with mochiko, sriracha, and shrimp paste. Its going to look pink... and with everyone in the pool of flavors you know its gotta be good. This a sandwich you won't forget.
