Okayama Katsudon,
Demikatsudon デミカツ丼, is a rice bowl with cabbage and cutlet and there are varieties that do not have cabbage, but there is always a sort of demiglace sauce on top. The founder of Demikatsudon is Ajitsukasa Nomura of Okayama who created a mixture of Japanese and Western cuisine. This would result in the taste that is contrasting and different from the standard katsudon with eggs. There are a variety of different kinds of demikatsudon in Okayama prefecture. The demiglace sauce is not the european demiglace and is made in a particular way with Japanese ingredients. Some sauces are based on fruits and ketchup added to them for a full-bodied taste. Variations come around with the different types of sauce that add: dried sardines, chicken bones and stock, soup consomme, chinese soup, Japanese worcester sauce, honey, butter, miso, and soy sauce. Sometimes the pork cutlet is replaced by veal cutlet. Toppings tend to be peas and carrots, sometimes green onions and cooked onions, red ginger with green onions and white sesame seeds, or garlic with black sesame seeds and nori shreds. Garnishes tend to separate the type of Demikatsudon that is made. Demikatsudon- Ajitsukasa Nomura Tamademi Katsudon- restaurant soba soba Demikatsu don has gained the nickname "Egg Demikatsu Bowl" that has golden raw eggs on top. It is based on typical demiglace recipe with added chicken bones and pork bones that is a unique flavor. Hayashidemi Katsudon- Menya Takumi Demikatsu don is a side menu item at Menya Takumi and is said to taste similar to Hayashi rice. While people who eat it are not sure what is in it exactly the attempts to recreate the flavor have added Hayashi Rice instant mix to demiglace sauce.
