Brandy is one of the more unique cooking alcohol used in its regional cooking and is a staple in knowing a recipe is apart of Kau'ai Regional Cuisine. The alcohol of choice would be Craft Beer, Sherry Alcohol, Shaoxing wine, and Sake Alcohol would be the important flavoring liquid that would help make dishes even more tasty. It was a joke that some brandy had tasted so good that consumers who planned to buy the brandy for their cooking had drank it before they could cook with it.
As there was not as much Raw Sugar Brandy (aka. Hawaii Brandy) residents would have to pick other sorts of brands to cook with. Some of these would be Napoleon brandy, Marsala Brandy, and Madeira Brandy, but it just wasn't the same as the old fashioned varieties. It was important as it was cooked with plenty sorts of sauces, soups, glazes, and reductions that were in many of the old cook books. Mysterious History of Brandy on Kauai Brandy was brought over to the island likely from the period of of other alcoholic drinks from ships. Brandy and rum were commonly found on sailing ships historically and were a sailors drink that could last the voyage overseas. No one really has information of when it became widely used as it was mostly just left as apart of many old recipes. Brandy is known to be a fermented alcoholic drink which utilizes fruit mash that is distilled process for its flavor, so it is possible that at some point the island could have made its own variations of brandy based on its history of plantations. Drink Rum and Cook with Brandy A similar product to brandy is rum which specifically uses fermented sugarcane juice and is more consumed than brandy in modern Hawaii and not cooked with as much. Many age old recipes that are unique to Kauai used Brandy as the liqueur of choice when it was cooking as it was said to add deepness to the flavor. Places like Koloa Rum Company in Hawaii have added to the rationality of alcoholic drinks that Kauai is known for. In the 1960s, many of the older recipes would use brandy in place of more american influenced recipes and would be using wine. This would be with dishes from french recipes as well which nods to that part in history as well when cooking, which gave Brandy greater roots on Kauai.
